Tortellini Soup

Now that Utah is finally seeing some snow, the cloudy days just screams "Soup Day". Soup can be such a quick and easy dinner for the family. One you can through together on the stove, or through in a crock pot to simmer all day while you are at work. This is one that was done for a church gathering that was so simple and so easy to double for a large group. For my family who are "meat and potatoes" type of folks, I simply cook up some chicken or kielbasa and add that to the soup to satisfy their appetites. 







Tortellini Soup

2 lg. Cloves of garlic
1 Tbsp margarine
3 C chicken broth
2 Cans Italian diced tomatoes
1/2 pkg. of 10 oz frozen spinach (chopped)
1 pkg. frozen cheese tortellini (16 oz)

In a large sauce pan sauté crushed garlic cloves and margarine. Add three cans of broth and bag of tortellini. Bring to a boil, reduce heat and simmer for 10 minutes. Add diced tomatoes and spinach. Add salt and basil to taste, Cook on low heat for about 5 to 10 minutes. Top with parmesan cheese. 

Like I stated earlier there are so many ways to add to this dish - you can add zucchini, and/or any kind of meat that you like. I really enjoy this soup because it is filling but not heavy.
