Egg Rolls

For many years we would celebrate Christmas at my Grandma’s with the entire White family. As the years passed and Grandma could no longer host such a large party, we started to have the party later towards the end of January to commemorate her birthday as well as the Chinese New Year. As our families began to grow, and life took hold, and Grandma’s passing…. This tradition was forgotten until recently, my cousin’s daughter, missing the tradition, decided that we needed to get together like we use to, so this weekend we celebrated what a great family, my Grandparents started so many years ago….  And the Chinese’s New Year.

We celebrate by having a pot luck dinner consisting of different dishes, my contribution was a recipe I received from a very dear friend, about 15 years ago, that has become a family favorite…. WARNING: This makes quite a few Egg Rolls, but they freeze and re-heat fantastically. My daughter love to pop a few in the Microwave after school for a snack, and as a Mom who am I to object when she chooses a healthy treat like these….  

Egg Rolls
4 pkgs. Egg Roll Wraps (found in the Produce Dept.)(5”x 5”)
4 Celery stocks
1/3 lb. Bean Sprouts
4 medium Onions
2 medium heads of Cabbage
½ lb. Carrots
4 C. Ground meat (Beef, Chicken, Pork, Turkey, or Shrimp)
2 Cans of whole Water Chestnuts

Shred: Cabbage, Celery, Carrots, Onions and Water Chestnuts, into a LARGE bowl.
Brown the meat of your choice…. Drain well.




Add the Seasoning:
½ tsp Pepper
½ - 1 tsp Garlic
½ tsp Salt
¼ tsp MSG (optional)
1 tsp salt
¼ -1/2 tsp Chili Powder
¼ C Soy Sauce

Mix together, (I find it easier to use my hands than a spoon, to mix it thoroughly).
Mixture should be moist, squeeze a handful if it drips, it good, if not add just a tiny bit of water.
Follow the instructions on the package of egg roll wraps for wrapping, and cooking. You can either fry or bake.
For Dipping, you could use a Sweet & Sour Sauce, Ranch dressing, or Barbecue sauce…. My favorite is hot Chinese mustard with a side of ketchup.



For the Super bowl next week, I planning on making

Southwest egg rolls
2 skinless chicken breast
¼ C Minced red bell pepper
¼ C Minced onions
2/3 C Corn (frozen)
½ C Black Beans – Rinsed and Drained
¼ C diced Jalapeno peppers
1 Tbsp minced Fresh Parsley
1 tsp Cumin
1 tsp Chili powder
¾ tsp salt
¾ C Colby Jack Cheese
10 flour tortilla

In a medium saucepan over medium heat, cook chicken in a tablespoon of olive oil - approximately 5 minutes per side, until meat is no longer pink and juices run clear. Remove from heat and set aside.
Add another 1 tablespoon olive oil in a medium saucepan over medium heat. Stir in green onion and red pepper. Cook and stir 5 minutes, until tender.
Dice chicken and mix into the pan with onion and red pepper. Mix in corn, black beans, jalapeno peppers, parsley, cumin, chili powder, salt and cayenne pepper. Cook and stir 5 minutes, until well blended and tender. Remove from heat and stir in Monterey Jack cheese so that it melts.
Wrap tortillas with a clean, lightly moist cloth. Microwave on high approximately 1 minute, or until hot and pliable.
Spoon even amounts of the mixture into each tortilla. Fold ends of tortillas, then roll tightly around mixture. Secure with toothpicks. Arrange in a medium dish, cover with plastic, and place in the freezer. Freeze at least 4 hours.
In a large, deep skillet, heat oil for deep frying to 375 degrees F (190 degrees C). Deep fry frozen, stuffed tortillas 10 minutes each, or until dark golden brown. Drain on paper towels before serving.

For Dipping….

1 Smashed, fresh avocado
½ C Mayo
½ C Sour cream
2 Tbsp buttermilk
3 tsp white vinegar
¼ tsp Salt
¼ tsp dried parsley
¼ tsp onion powder
1/8 tsp dill weed
1/8 garlic powder
1/8 pepper
Mix and chill for 30 minutes.

I guess you could say I’m on a bit of an egg roll kick lately…. Hope y’all enjoy.

Veggie Pizza

As I mentioned in my last post, my life this year is a bit crazy. I just returned from a week long cruise in Alaska, followed by a weekend at the cabin for Memorial day, then yesterday we spent the day up at the Camp Chef Warehouse for a Dutch Oven Gathering. And working full time in-between.

I thought I'd share one of the recipes I did yesterday for the DoG. It was pretty simple and perfect for the weather- It was too hot for hot food in my opinion. Not only that but I'm still working off the cruise food. 

Fresh Veggie Pizza
This was prepared in a 12" Dutch oven lid, but if you have a pizza pan or stone that will work great in the oven. 

2 Packages (8 oz) refrigerator crescent rolls
1 (8 oz) container of whipped cream cheese
4 oz. regular cream cheese
2 Tablespoons Mayo or Salad dressing
1 Teaspoon minced garlic
2 teaspoons Dill weed
Salt and pepper to taste
and chopped veggies to taste - On this one is Broccoli, green onions, yellow peppers, shredded carrots, shredded cucumber, celery, tomatoes, and sliced mushrooms. Other options are zucchini, yellow squash, olives, red or green bell peppers - the sky is the limit with the fresh veggies that are in season.

For the Dutch Oven version: lightly spray the inside your lid (I prefer the lids that have a deeper lip than the flat - but they will work too.) with Bakers Joy or Pam type spray. Separate the crescent rolls into 16 triangles and place them with the wide ends on the outside and the points on the inside. Pressing the seams together - on this lid I ended up with an extra triangle that I just used pieces to fill in, then put the rest in the center - see pic.

Bake with your Dutch Oven upside down (lid on the bottom - Supported by a trivet) with 8 coals under and 17 on top, 15-20 minutes - until golden brown. Let cool.



For the Oven version - the layout will be the same just using a pizza pan or stone and bake at 375 in your oven for 12-15 minutes until golden brown.

Topping - 
In a medium sized bowl combine cream cheeses, mayo, salt, pepper, garlic and dill weed, stir until combined and spread evenly over the crescent rolls. 
Sprinkle Veggies over the pizza - Layer if you like, lightly dust with a little more dill weed, slice and serve. 

This will feed about 10 people as a side dish. 

This was definitely different that what is usually prepare at a Dutch Oven Gathering, and was certainly a nice change of pace.

Camping note - If you try this out camping - take a minute before you leave to chop all your veggies and bag them for quicker prep at the camp site and it will give you more family time in the outdoors!

This is another great appetizer that is great for dinner parties or get-togethers. It only takes 30-45 minutes in the oven and toss them in the crock pot to keep them warm, yummmm, and it makes your house smell bacony good!

Honey Glazed Bacon wrapped Lil' Smokies

2 packages Lil' Smokies - what ever flavor you like
2 packages of bacon
Toothpicks
Honey

Cut the package of bacon into 3rds, wrap 1 piece around a Lil' Smokie and secure with a toothpick. Place on a cookie sheet  (one with a lip to catch the drippings) and bake at 350 degrees till bacon is cooked to your liking - I like mine crispy tender. about 30 to 45 minutes.

To glaze them about 10 minutes before you are ready to pull them out of the oven, drizzle some honey over them and continue to bake till done.

Options: drizzle them with Maple syrup, or brown sugar -or both.....

Smoked Salmon and Shrimp tarts

This year I wanted to make Christmas Eve a little bit special. Tradition has it that we have ham with rolls for sandwiches, and shrimp, I wanted to make some canapés / Hors d’oeuvres... Something bite sized that the family could just grab as the socialized and played games.  I found these really neat, mini phyllo shells in the freezer section at the grocery store and thought "savory not sweet".

With the shells being precooked these are super simple to make and give the image of many hours of work....

Smoked Salmon Tarts

1 8oz package of cream cheese
1/4 cup butter
1 tablespoon of lemon zest
1/2 teaspoon of dill
1 1/2 tablespoons heavy cream
1/2 teaspoon sea salt
2 15ct packages of mini phyllo shells
1 package of smoked salmon
2 sprigs of fresh baby dill

Whip all the ingredients with a mixer until light and fluffy. Place the mixture in to a piping bag (or a plastic bag) and pipe into the shells. Cut small strips of smoked salmon roll and place on top of the cream cheese, garnish with small pieces of fresh dill.

Shrimp Tarts

1 8oz package of cream cheese
1/4 cup butter
1 1/2 tablespoons heavy cream
1 package small shrimp ( I used salad shrimp)
2 15ct packages of mini phyllo shells
Cocktail sauce

Whip the cream cheese, butter and cream. Place the mixture in to a piping bag (or a plastic bag) and pipe into the shells. Top with 1/4 teaspoon cocktail sauce and 2 or 3 shrimp.
With these shells there are so many things you can make -


1 8oz package of cream cheese
1/4 cup butter
1 1/2 tablespoons heavy cream
1 cup powdered sugar

Toppings are endless - Fresh fruit, Pie filling, Caramel, Chocolate

Whip the cream cheese, butter and cream. Place the mixture in to a piping bag (or a plastic bag) and pipe into the shells. Top with toppings of your choice.

What a versatile product to make the holidays, or any event, elegant and special, and super simple.

Meatball Monkey Bread


Sorry for the hiccup – My laptop took a dive and had to spend some time at the PC Doctors – but we are back up and running now and as promised – here is part 2 of the Meatball story - So after I made the meatball sliders for dinner the other night – I had to hide a bowl of meatballs from my family so I could make this dish.

Note: On the Meatballs recipe. When making them to freeze, I prefer, not to add the glaze (the ketchup, brown sugar and cider vinegar) – so just in their naked state.  I only use the glaze when I make it into the Meatloaf.

So onto the Meatball Monkey bread – As stated I had seen it somewhere and it intrigued me, I have a friend who wrote a blog about cooking for 365 in a Dutch Oven and she posted this one when her oven recently went out and she pulled out her Dutch Oven to fix a meal for her family. Dutch Oven Madness - she is quite the inspiration! Up on seeing her post I thought – I want to put a spin on mine, to see what I could come up with.

This was a weeknight – one that was snowy, and after working all day plus a treacherous commute home, I was in a hurry to get dinner on the table so I could sit and unwind. So I did not make my roll dough from scratch – I just used Rhodes Rolls – I called home about 3:30 and had my daughter pull them out of the freezer and let them start to thaw.  – But if you have the time and want to try your hand at making rolls from scratch – try this recipe Rolls

I went to my fridge to see what I had to put in with my meatballs – I had some left over shredded cheese (pizza blend) from my Sourdough Pizza the other night , My friend used pepperoni, I didn’t have any left – But I had some mushrooms, I sautéed them up with some garlic and onions, then I started to assemble. I did not get too creative just because I was too tired. - but as you read on I'll give you a few creative spins on this, with the hope you will come up with some of your own too.

Meatball Monkey Bread




20 Rhodes Dinner Rolls (9" X 13" X 2" pan = 12 - 16 Texas Rolls or 16-20 Dinner Rolls.)
20 Meatballs – either homemade or frozen
2-3 tablespoons of melted butter
Mrs. Dash – Garlic and Herb
Parmesan Cheese

Filling – whatever sounds good…Here are a few wild thoughts I had – if you made your own meatballs and used ground chicken you could add some parmesan cheese and some garlic and dip in Alfredo sauce. You could sauté some peppers, onions and mushrooms, with regular meatballs and dip in au jus for a French dip variety. A Mexican variety, sprinkle a little taco seasoning or salsa in with your meatball and use a pepper jack cheese and dip in sour cream or guacamole. Ok – one more – Plain ol’ meatballs and dip in BBQ sauce.  – Let your imagination run wild – there are many combinations that you can make.

My filling was just the Meatball and the cheese – and because not every member of my family likes mushrooms I just put them on the top of mine after they were baked. But if you are fans you could put them right in with your meatball and cheese.

To assemble – Roll the dough out on a lightly floured surface, into a circle. Place a small (‘bout a teaspoon) amount of cheese on the dough; place the meatball in the center, bring the dough up and around the meatball and cheese and seal in all the goodness. Place all inside a greased pan and brush with melted butter and sprinkle with Mrs. Dash and Parmesan cheese.

Bake @ 375° for 20-25 minutes until the y are golden brown and a slight tap produces a hollow sound.

We dipped ours in leftover Pizza sauce but you can dip them in what ever you like - I think my son was using Ranch dressing....

Now those of you that have read my blog know that I always state, that if you can cook it in a 9x13x2, pan you can cook it in a 12” Dutch Oven- So I am giving you directions to make this in a 9x13x2 pan – but I did mine in my 12” flat bottom Dutch Oven – in my oven @ home – but can easily be done over briquettes. - for a 9x13x2 just place in rows instead of a ring.

If you want to make this in your Dutch Oven with Briquettes - 9 briquettes on the bottom and 18 on top.

Garlic, Cream Cheese stuffed, Bacon Wrapped Shrimp

A couple of weeks ago I was beginning to think my creativity was gone so I posted a question on Facebook asking what every one's favorite main dish was, I had a friend mentioned this so I Google'd this and there were quite variations so I took what I learned from them as this is what I came up with and DANG.......  these are good.
A great garnish or an appetizer.




Cheese-Stuffed, Bacon-Crusted Shrimp - Garnish

10 large shrimp, peeled (leaving the final shell segment and tail intact)
2 garlic cloves minced
1/8 cup loosely packed chopped parsley
1/4 teaspoon black pepper
Salt
1  ounces Colby Jack shredded
3 ounces cream cheese
10 thin slices of bacon, cut in half

Cut a 1/2-inch deep incision (without cutting through the shrimp) down the inside of each of the peeled shrimp.  Scrape out the (usually dark) vein.

Place the garlic, parsley, black pepper, and cheese in a bowl.  Mix, mash everything together, until thoroughly blended and creamy.  Taste and work in a little salt if you think necessary.

Scoop out a generous teaspoon of the filling and press it evenly over the butterflied part of a shrimp.  Wrap the shrimp in a piece of bacon—to ensure that the bacon crisps make sure it overlaps no more than an inch. Continue until all the shrimp are stuffed and wrapped.

Place a 12” Dutch Oven over medium-high heat 12-15 briquettes.  When thoroughly heated, lay the shrimp in the pan, overlap-side down.  Cook until crisp underneath, about 1 minute, then turn each piece a quarter of a turn cook another minute.  Continue until all 4 sides are browned in the same manner.   The bacon needs to be thin enough that it can crisp in the same time it takes for the shrimp to cook: you’ll know the shrimp are perfect when only a hint of pink translucency remains deep in the butterfly.

Coconut Chicken

Ever have one of those days where 101 recipes come mind but none of them sound good?  That happened tonight - so I turned to my computer and Pinterest - I typed in "chicken" and perused through the pictures looking for something different. This recipe caught my eye because, I love Coconut Shrimp. I seldom get to indulge in them due to the persnickety eaters that reside in my home. So I thought  I'd give Coconut Chicken a shot.
Ok so this is not the best picture - the link has much better pictures - I think it's finally time to invest in a new camera. 

1st the text message to all family member to make sure the majority will eat coconut.

all but 1 - she can have something else. 
Next - do I have all the ingredients.

Ok so I didn't have the Sweet Chili sauce but as one person commented on her blog - I had Agave & Sambal Oelek this was wonderful. Something I might try the next time I make this, (and I will) will be some Orange Marmalade with some Sambal Oelek.   Anyone wondering what this Sambal Oelek is - it is found in the Asian foods section of your local grocer. it is a chili pepper based sauce, but warning - a little bit goes a long, long way.

This was a big hit with my family, I think Andrew went back for 3rds. Might have to make these for the Superbowl.... Give it a try, let me know what you think.

Orange Chicken & Egg Rolls

Many years ago I was in charge of the Blue and Gold Banquet for the Cub Scouts in our area. Our theme was the Orient - I consulted  my committee and one of them had a recipe for homemade egg rolls. She kindly volunteered to make them as part of our dinner. One taste and I was hooked, I asked for her recipe. 

The other day at the store Becka and were walking through the produce department and they had a larger that normal display of egg roll wrappers (assuming for the up coming Chinese New Year (Jan, 23, 2012)), and she commented that home made egg rolls sounded good. Sorry to say these are a bit time consuming. So I told her I would get the ingredients and she could make them seeing that she was out of school last Friday. So as I was at work I kept getting texts, "Do I drain the meat? What are Bean Sprouts?" as I explained to her where to find these - I was pleasantly surprised to come home to her rolling egg rolls and they smelled amazing. She then reminded me that we had a bunch of oranges and Orange chicken sounded good. She found a recipe and as I was frying the egg rolls she started on it - they both turned out Amazing! so I am sharing them with you today. 



Egg Rolls


3-4 pkg Egg roll skins (5x5)                                                     *Seasoning
4 celery stocks                                                                      ½ tsp Pepper
1/3 lb Bean Sprouts                                                              ½ tsp Garlic
4 Med onions                                                                         ½ tsp Celery salt
2 Med heads of Cabbage                                                    1 tsp salt
1/2 Lb Carrots                                                                       1/4 tsp Bon Appetite
4c Meat                                                                                   ¼-1/2 Chili powder
1 can water chestnuts sliced                                                 ¼ c Soy Sauce

Directions: Cook meat. Grind/chop veggies. Mix in large bowl & add seasoning. Mixture should be moist, squeeze a handful- If it drips, good; if dry add a little water. Do not saturate. Place one large spoonful of mixture in to egg roll skin. Fry in electric skillet at 350°

Some short cuts we found work well is on the cabbage - we bought the Cole slaw shreds, we also omitted the Bon Appetite (this is MSG) because of allergies. Our favorite choice of meat is ground turkey, however ground beef and pork is good too. 


Orange Chicken

2 lbs boneless skinless chicken, chopped into bite sized pieces
1 eggs                                                                               1 1/2 teaspoons salt
White pepper                                                                    oil ( for frying)
1/2 cup cornstarch, plus                                                   1 tablespoon cornstarch
1/4 cup flour

Directions
Place chicken pieces in large bowl. Stir in egg, salt, pepper and 1 tablespoon oil and mix well. Stir cornstarch and flour together. Mix flour mixture and egg mixture. Add chicken pieces, stirring to coat. Heat oil for deep-frying in wok or deep-fryer to 375°. Add chicken, small batches at a time, and fry 3 to 4 minutes or until golden crisp. (Do not overcook chicken). Remove chicken from oil with slotted spoon and drain on paper towels; set aside.

Orange Sauce for Stir Fry

1 1/2 tablespoons soy sauce                                             1 1/2 tablespoons water
5 tablespoons sugar                                                            5 tablespoons white vinegar
Zest of 2 oranges,

Combine and set aside. 

1 tablespoon ginger root, minced                                         1 teaspoon garlic, minced
1/2 teaspoon crushed hot red chili peppers                        1/4 cup green onions, chopped
1 tablespoon rice wine (or substitute water)                        1/4 cup water
1/2 teaspoon sesame oil


Directions
Heat  skillet (or Wok) 15 seconds over high heat. Add 1 tablespoon sesame oil. Add ginger and garlic and stir-fry until fragrant; about 10 seconds. Add and stir-fry crushed chilies and green onions.  Add rice wine (or water) and stir 3 seconds. Add 1st mixture and bring to boil. Add cooked chicken, stirring until well mixed. Stir water into remaining 1 tablespoon cornstarch until smooth and add to chicken. Heat until sauce is thickened. Stir in sesame oil and additional orange zest if desired. Serve over rice.

Note: I do not own a Wok I just used my skillet  on my stove and this worked beautifully.

Thanksgiving w/ the Boyers

For years I have battled with trying to cook pies, rolls, ham, etc in one oven and failing miserably. Because, I have yet to own an Ultimate Dutch Oven and my deep 14 D/O out of commission. I remembered, years back when we cooked a turkey on a neighbors Weber grill, and how good it turned out. I searched out how we did it.
This website is how I remember we did it – So Rod and I went to Home Depot and purchased a Weber One-touch Gold Grill, and the charcoal baskets.
I have friends who are in to BBQ competitions and smoking meats, I have heard them talk a lot about brining poultry before they cook it, so I soaked my turkey 20# in 6 quarts of 2-1/2 C salt water along with some onion (about 1 medium onion) and 1 head of garlic cloves, over night.
BBQ Turkey
At 9:30 in the morning, in 20° temperatures, I rubbed the turkey with olive oil and I sprinkled it with Mrs. Dash (Onion& Herb flavor) then I put the bird the grill, with 12 coals in each side, in the baskets. Each hour I checked the coals adding equally 6-10 coals as needed.  During the last hour I checked the temperature, when the thickest part of the breast read 165°, the turkey was done.

While carving it, it had the beautiful pink smoke ring, and outrageous flavor. This, is now our preferred way of cooking a turkey. It also freed up my oven so I could make my pies, rolls, and ham.
I was also grateful to spend the day with Rod’s parents, Traci and her family and Lee and his, as well as my dad. I am very thankful to have such a great family and friends.
As a side note, I have heard many times this holiday what is my favorite side dish on Thanksgiving. Mine has to be Onion Bombs, Green onions cleaned and trimmed to 4-5 inches, with a ball of cream cheese wrapped around the white end then rolled in shredded Colby Jack (or cheddar)cheese. To eat bite the cheesy end of the onion. It’s kinda like your own personal cheese ball.

Evening of Excellence

This past Tuesday was our Evening of Excellence for our Young Women’s group – our theme was an awards show. We had an MC who announced the program and as the leaders we were the presenters. Each girl got an award (a gold spray painted Kool-Aid Kool Burst) and Swag bag (with Shower Gel, Hand soap, and nail polish) as we read a short Bio about each of them. At the end we had desserts – finger food sized desserts – And my love of cooking earned me the honor of preparing them, and I am sharing them with you. These were fun and super simple and looked totally fitting for the occasion. These would be great for a Christmas Eve Party, or a New Years Eve party. I apologize I did not take pictures. If I find someone who did I will post them later.

Our menu:
Cinnamon Almonds, Apple pie bites, Peanut butter bars, Savory Parmesan bites, Cream Cheese tarts.

Savory Parmesan Bites

1 (8-ounce) package cream cheese, softened
1 cup grated Parmesan cheese, divided
1 small red bell pepper, chopped
1/4 cup fresh parsley, chopped
2 (8-ounce) cans refrigerated crescent dinner rolls
Stir together softened cream cheese, 3/4 cup cheese, bell pepper, and parsley. Unroll crescent rolls, and separate each can into 4 rectangles, pressing perforations to seal. Spread 3 tablespoons cream cheese mixture on each rectangle. Roll up, starting at 1 short side, jelly-roll fashion. Cut each roll into 4 equal pieces, using a serrated knife. Place on ungreased baking sheets. Sprinkle bites with remaining ¼ cup cheese.
Bake at 350° for 13 to 15 minutes or until golden brown.
Makes 32 pieces

Apple Pie Bites

1 Pkg. Refrigerated Biscuits (I like the flakey kind)
1 Granny Smith Apple, peeled and finely chopped
2 Tbsp sugar                                                     1 tsp cinnamon
½  tsp nutmeg                                                  4 ½ Tbsp butter melted
Preheat oven to 375°
Line your muffin tin with paper or foil liners and spray them with non stick spray. Flatten out each biscuit with a rolling pin into a 3” circle brush with melted butter avoiding the edges.  Mix apples with spices and place a small spoonful on to each biscuit. Bring the sides of the biscuit up to enclose the filling, pinch and twist to seal the top (or just gather and as they bake they open to look flower like). Place in liners brush the tops with melted butter and sprinkle with cinnamon and sugar and bake for 13 minutes or until golden brown.

Cream Cheese Bites

1 Pkg. Fillo Dough shells (found in the freezer section)
½  pkg. Cream Cheese
2 Tbsp Butter
2-3 C Powdered Sugar

Mix, Cream Cheese, Butter and Sugar until frosting like consistency. Thaw shells, put filling into a gallon bag, and make a small cut in the corner of the bag, pipe filling into the shells. Refrigerate. Top with a berry or your choice.

Peanut Butter Cups

1 ½ C Peanut butter
1 C Butter / margarine
1 pkg Graham Crackers
1 lb. Powdered sugar
1 (1 lb Size) Hershey’s Bar
Cream butter and peanut butter; blend graham crackers to fine crumbs. Mix with powdered sugar. Mix crumb mixture with peanut butter mixture. Press into a 9 x 13 pan. Melt Chocolate in microwave 1 minute at a time stirring after each minute till melted, pour over peanut butter and let sit to cool. Cut into cubes to serve.

Cinnamon Almonds

2 C Raw Almonds
1 C Sugar
1 Tbsp Vanilla extract
1 Tbsp Cinnamon extract (not oil)
2 Tbsp Ground Cinnamon
¼ C Water

In a Cast Iron skillet, place Almonds, sugar, cinnamon, extracts and water. Stir over a medium heat until moisture has evaporated and nuts look dry. Remove from heat and let cool.

These can be made with other nuts.
