My Crazy Life

I'm sorry it's been a while since I've posted. My daughter is graduating from High School this Friday and between all of her year end projects, my youngest's school projects, softball, church, and work. Some days it's all I can do to get through the day.

The other day we spent the afternoon with some new friends out on Antelope island. We attended a pot luck luncheon that was a bring your own meat and a dish to share, and because my Dutch Ovens have been sitting since the Spring Convention, I figured it was time to break them out. We made Dutch Oven Cobblers - 2 different kinds Apple Spice and Butter Peach. These are 2 very easy cobblers and oh so yummy.

Butter Peach

2 Quarts Peaches (I used my home preserved peaches - but you can use 2 cans if you want)
1 Butter yellow cake mix
1/2 C Quick cook oats
1/2 C Brown sugar
1/2 Butter (or margarine)
Dump the Peaches (juice and all) in to the bottom of a 12" Dutch Oven. Sprinkle the peaches with the oats, (they help soak up the juice). Sprinkle on the cake mix, top with brown sugar. Cut up the butter an place randomly on the top of the cobbler. Place on 8 coals and put 16 coals on the top and cook till golden brown.
Serve with Ice Cream or Whipped Cream.

Apple Spice

2 Quarts apple pie filling (I used my homemade pie filling - but you can use 2 cans if you want)
1 Spice cake mix
1/2 C Quick cook oats
1/2 C Brown sugar
1/2 Butter (or margarine)
Dump the Pie in to the bottom of a 12" Dutch Oven. Sprinkle on the cake mix, top with brown sugar and oats. Cut up the butter an place randomly on the top of the cobbler. Place on 8 coals and put 16 coals on the top and cook till golden brown. (My homemade pie filling already had cinnamon in it - you can add some cinnamon and/or nutmeg to you apples or the top if you'd like)
Serve with Ice Cream or Whipped Cream.

Our meat was Lemon Pepper Chicken, I took a bag of frozen chicken breasts, thawed them out, rinsed them off and placed them in a gallon Ziploc bag. To the bag I added 2 sliced lemons, 1/4 C lemon juice, 2 tablespoons Lemon pepper (found in the bulk section @ Winco) 1 tsp salt, 1/2 tsp pepper, and a drizzle of olive oil. And tossed them into the cooler to marinate while we drove out. We took our Volcano Grill to start the briquettes for the Cobbler and then  put the grill top on it and grilled our chicken. 

It was an awesome afternoon. 
I promise to be better at posting - I just have to get through this week.
